Reformulation and Nutrition Claim
You have just got a new job as a product developer for a food company and your line manager has asked you to revamp an old classic product to increase sales and compete with a fast moving market. On this occasion, you are required to reformulate a milkshake according to product specifications using the original recipe as a base.
Working in groups of 2-3 students, using the milkshake’s original recipe as a base and the replacers listed on page 2, you are tasked with preparing and rating (appearance, flavour, mouthfeel) four products/samples: three reformulated products and a sample of the original milkshake. You can modify one component only (e.g. either reduce/remove salt or sugar or fat) in your product using one or more replacers (or different proportions of the original recipe’s ingredients), which must be linked to a nutrition claim – use Nutritics for accurate calculations.

Oral presentation (formative)
Present your new product (3 minutes), in order to obtain funding: you will have to be professional, articulate, and knowledgeable about your product, the target market, the scientific evidence, and convincing! Presentations will be held during the practical sessions.
Report (summative)
Write a 2000 words report detailing the scientific evidence for the component that you are going to modify in relation to the nutrition claim of your choice. You will need to state what the product is (e.g. low sugar vanilla milkshake), briefly review its nutrition profile, the target market and describe the various stages of development expected for this reformulation (more details on page 5).
